German-Inspired Charcuterie Board with Beet-Pickled Eggs

Bright pink beet-pickled eggs are the star of this snacking board, inspired by the German concept of Abendbrot which is a simple dinner of cold cuts, cheese and bread. Soleier (pickled eggs) are a popular, old school bar snack in Germany. The traditional way of eating them is by scooping out the yolk and filling the white with a little vinegar, hot mustard, oil and black pepper. Then you pop the yolk back on top and eat it in one big bite!
