Chopped Egg and Asparagus with Brown Butter

Chopped Egg and Asparagus with Brown Butter

Our friend Jasmine Baker shares an easy, healthy Chopped Egg and Asparagus with Brown Butter dish. It’s a great option to bring to family gatherings for everyone to enjoy. Need to save time? Use Conestoga Farms Hard Boiled & Peeled Eggs instead. 

Ingredients

  • Bunch of asparagus
  • 1/3 Panko crumbs
  • 4 Conestoga Farms Free Run Omega-3 eggs
  • ¼ Butter
  • Pinch of salt

Instructions:

  1. Blanch a bunch of asparagus in salted water and transfer to a platter
  2. Toast about 1/3 of a cup of panko crumbs, set aside
  3. Carefully place 4 large eggs into boiling water for 8-9 minutes. Transfer to an ice bath for 5 minutes
  4. Peel your eggs, then give them a rough chop and sprinkle on top of the asparagus
  5. Brown about 1/4 cup butter and drizzle all over the chopped egg
  6. Top with the toasted panko
