Egg Bites

Get the kid chefs in the kitchen, because this recipe is so simple to make! The perfectly portable breakfast or snack recipe by Lena Almeida.

Ingredients

  • 1 carton Conestoga Farms Free Run Omega 3 Eggs

  • Assorted additions, such as chopped ham, onion, pepper, chives and bacon

  • 1 cup grated cheddar cheese

  • Salt and pepper to taste

  • 1 muffin tin, greased well

Instructions:

Method

  1. Crack 12 Conestoga Farms Free Run Omega 3 Eggs into a large measuring cup or mixing bowl. Beat thoroughly until well mixed. Add salt and pepper to taste.

  2. Preheat oven to 350-degrees F.

  3. Divide assorted additions equally into nine muffin cups, filling about 1/4 full. Pour egg mixture on top, distributing evenly amoung cups. Top with a handful of grated cheddar cheese.

  4. Bake for 20-25 minutes or until egg bites are set (they should feel firm to the touch). Cool; remove from tins. Enjoy immediately or freeze for up to three months. Enjoy!
